Buffalo mozzarella sfoglia, also known as “pettola di mozzarella” is a thin ready to fill and roll Campania buffalo mozzarella sheet. Belonging to the spun paste family of cheeses, it shares the same characteristics, such as the white porcelain color and the elastic consistency with no holes. Compared to traditional buffalo mozzarella, the dough is more compact in structure, but has a less intense and aromatic flavor.

In order to produce Sfoglia di mozzarella, the same basic ingredients used for making mozzarella are needed. Buffalo milk undergoes different processing steps, namely coagulation, breaking and ripening of the curd and, finally, spinning. However, instead of shaping mozzarella at this very last stage, thin sheets of mozzarella are made by pulling and stretching the dough.

Buffalo mozzarella sfoglia is available in a ready to fill and roll sheet. The most popular filling consists of dry cured ham, rocket and cherry tomatoes. However, you may also fill the roll with a variety of other ingredients. Due to the minimal release of whey and the reduced amount of salt, actually, you can create both sweet and savory dishes, each of them having a stringy buffalo mozzarella wrapping.

In order to prepare the classic Sfoglia di bufala, fill it with ham, tomatoes and rocket. Then, roll and wrap the sfoglia in parchment paper, letting it rest in the refrigerator for about 10 minutes. Finally, cut the sfoglia into thick slices and serve them as a mouth-watering appetizer.
