Smoked buffalo bocconcini from Campania are a variant of the classic mozzarella bocconcini. Unlike the mozzarella ones, buffalo bocconcini are smaller and reach the weight of 50 g. On the other hand, mozzarella has different sizes: 125, 250 and 500 g. Bocconcini are excellent as snacks and amazing to taste as an appetizer with cold cuts.
Smoked buffalo bocconcini are smoked milk pearls and, therefore, they are golden-coloured. They have a very thin crust that envelopes the internal cheese layers. The characteristic scent of the smoking envelopes that of milk and cream providing bocconcini of a unique taste.
The specific feature of this spun paste cheese is its gluey consistency and the abundance of milk it oozes when cut. It’s always fascinating to admire the round shape of mozzarella bocconcini and the beautiful scent of their smoking.
Notwithstanding the shape and the many variants of this cheese, mozzarella represents the typical made in Italy symbol for its excellency within the gastronomic field, being exported all over the world as the “white gold” of the Campania region. The DOP/POD mark is important because it is a synonym for quality and a guarantee of security: there is no buffalo mozzarella of Campania that doesn’t have the DOP mark.
All the characteristics of buffalo mozzarella are individual, from the shapes to the aspect and consistency.

How to preserve smoked buffalo bocconcini
The authenticity of the Collebianco dairy products guarantees natural ingredients without any preservatives and additives. The smoked buffalo bocconcini and all the other spun paste cheese are fresh products to be consumed shortly. It is necessary, however, to leave buffalo mozzarella bocconcini in their serum and to open the package only when they are to be consumed. So, you must not store them in the refrigerator because cold temperatures would alter their taste and shape.
You can taste smoked buffalo mozzarella bocconcini by yourself of with your friends or family. Usually, mozzarella is served raw with cherry tomato, fully respecting the Campania tradition. Obviously, there are a lot of recipes that show how it is possible to prepare delicious meals with cooked mozzarella or bocconcini. Here are some suggestions:
- Appetizer: breaded and fried mozzarella/bocconcini;
- First course: spaghetti with melted mozzarella
- Second-course: bocconcini with anchovies and rocket, which is a really light and tasty meal.
As you can see, mozzarella and smoked bocconcini are special ingredients to prepare meals like real works of art
