Aversana buffalo mozzarella from Campania DOP/PDO is the original buffalo mozzarella. Actually, such an incredible spun paste type of cheese is said to have originated in the land between Aversa and Capua, formerly one of the areas with the largest number of buffalo farms. The first cheese factories that contributed to make mozzarella a success also established here.

Similar to mozzarella in its round shape, Aversana buffalo mozzarella from Campania DOP/PDO is mozzarella on a larger scale, as it weighs about 500 g. It can be easily recognized by its sweet and delicate flavor, as well as by the soft and very thin rind. Initially, it has an elastic and fibrous structure. However, Aversana buffalo mozzarella from Campania DOP/PDO tends to soften if allowed to rest for some hours in its own preserving liquid. The making process of Aversana buffalo mozzarella is essentially the same of mozzarella. Actually, after the curd is obtained by processing buffalo milk, it is stirred in hot water. As a result, the so called “spun paste” is obtained and, further worked by the expert hands of cheesemakers, transformed into soft Aversana mozzarella DOP/PDO.

The Dop label guarantees that the product responds to specific quality standards, including, in particular, the exclusive use of whole and fresh milk from Italian Mediterranean buffalo cows. The consortium for the protection of buffalo mozzarella strictly controls the entire production chain: from the buffalo breeding to the product packaging.

How to preserve it

Aversana buffalo mozzarella from Campania DOP/PDO is fresh cheese. This, of course, does not mean that it should be stored in the refrigerator or in the freezer. We strongly discourage this option, as cold temperatures would alter the organoleptic properties of this type of cheese, making the scent vanish and affecting the elasticity of mozzarella. For this reason, then, do not keep mozzarella in cool places.

Aversana buffalo mozzarella should be stored in its preserving liquid, keeping the plastic bag sealed until you open it to consume the product. This means you can drain mozzarella from its water just before serving. When it is cold, we suggest you dip the still sealed envelope into warm water in order to punctuate the properties of mozzarella

Mozzarella Aversana is the spun paste cheese par excellence. It can be enjoyed on its own or with a drizzle of oil and a pinch of oregano on it. It combines well with tomato (this combination is a classic now), basil and aubergine. The Caprese Salad is a cornerstone of Campanian cuisine, with mozzarella as undisputed queen.

Aversana buffalo mozzarella DOP/PDO also pairs well with pasta. There are several first-course dishes containing mozzarella, such as penne pasta, mozzarella and tomato or white sauce and layers of lasagne. At any rate, finger food is not to be underestimated: try mozzarella cubes rolled in breadcrumbs and fried as an excellent appetizer. It goes without saying that Margherita pizza with buffalo mozzarella is the most beloved and eaten dish, in Italy and in the world.
