Smoked buffalomozzarella is a variant of the classic DOP/PDO buffalo milk mozzarella typical of Campania

This mozzarella is a fresh spun paste cheese which obtained the PDO certification. The productive process of our smoked mozzarella follows all the rules of Italian Consorzio di Tutela (Protection Association): from the freshness of the buffalo’s milk to the processing and packaging of the mozzarella.

As the buffalo mozzarella, also its smoked variant is produced following all the quality standards needed to meet the PDO mark. At the end of the process, the spun paste cheese is smoked with a smoke produced by the combustion of hay or laurel. This procedure provides the buffalo mozzarella’s crust an amber colour and an intense and rich flavour.

Smoked buffalo mozzarella is round shaped and with a thin and smooth crust. The colour is of course golden, thanks to a smoking process which also determines the scent and the taste of the finished product.

The cheese is white and elastic and, when cut, releases a delicious profusion of buffalomilk, which is a defining feature of these unique dairy products.

Buffalo smoked mozzarella must not be put in a refrigerator. Although a fresh cheese, this variety of mozzarella must be stored at room temperature and with its package sealed. This means mozzarella has to remain in its own water until served. Before serving this product, the mozzarella has to be deprived of its liquid and eaten in a few days.

It’s necessary to store mozzarella at a cold temperature, as lower degrees may alter its organoleptic properties. If stored in a refrigerator, its peculiar scent, its consistency and the peculiar milk flavour might be lost, unless you decide to cook it. In fact, you can also store buffalosmoked mozzarella in a refrigerator if you plan to blend your melted and unruly smoked mozzarella in delicious dishes.

Buffalo smoked mozzarella can be used in many recipes. Being a versatile dairy product, you can utilize it for a rich appetizer, with cold cuts and pickles, or cooked in dainty main courses, as for instance ragù lasagne with smoked mozzarella. This one is a quite simple recipe which will take you less than an hour to prepare and, of course, you can also taste mozzarella with the ingredients mostly associated with it in the Italian cuisine: tomato, olive oil and aubergines.

You may also prepare a second-course dish using mozzarella and zucchini: an unruly casserole which alternates zucchini, mozzarella and grated cheese in as many layers as you wish. The layers are kept together by an amalgam of eggs, which merge the savoury taste of mozzarella and the delicacy of zucchini.
